Ginger Simple Syrup
Ginger simple syrup is a snap to make! It will add a flavorful zing to cocktails/mocktails, flavor an iced/hot coffee, or drizzled over oatmeal or fresh fruit! It's versatile and delicious!

4 oz fresh ginger root (1 piece about 10 inches long)
1 cups of sugar
1 cups of water
Peel the ginger root with a vegetable peeler, and chop into small pieces. Bring sugar and water to a boil in a saucepan over medium-high heat, stirring until all the sugar is dissolved. Add the ginger and bring the mixture back up to a simmer. Remove from heat and allow to steep for at least 30 minutes. (Note: the longer you steep the ginger, the stronger the ginger flavor.) Strain syrup through a fine-mesh strainer into a glass jar. Discard ginger. Keep the syrup for a month refrigerated in an airtight, preferably glass, container. Enjoy!
